if there is no wall and zero troops you should not have any deaths. I do it all the time

Cities still have a small defense value even with zero walls.

your troops are dieing on the walls as they are a defense for a city. If you are farming a barb remove walls troops will not die then

These cities have a minimum defence level irrespective of incoming troops.\
You will always lose one or two against a barb city.
