Scholars are what you use to conquer other cities.

You build a scholar by building an academy, and once you build an academy you will be given more options on how to use scholars.
Feel free to check out the help information within the game but using the question mark button on the upper right portion of the screen from inside your city hall.

Technically, if the wall is at zero, there are no troops left in the city and most importantly there are no more troops in production, the scholar would be fine on its on.
Scholars have their own attack and defence stats.

The troops that you send with are just for insurance and at that point it's just whatever flavour you prefer.

If there are still troops in production however it's best to make sure they do have a good escort, and that depends on what troops are in production.
