In the game go to settings>help>units>unit overview. It has a good explanation of all troops as well as the symbols you are referring to.

i read it somewhere that red shield is defense against infantry and blue shield is against mounted units.

When upgrading a unit I've noticed a red a blue shield with an associated number. What does wash shield mean?
