You escort scholars with troops to attack a city, if the scholar survives, the citizens loyalty is lowered. Keep repeating till loyalty hits zero. The citizens dispose of the former lord, and make your scholar the new puppet lord.

also it is best to alternate which city you attack. barbs can grow with you if you give them time to save up resources to build. i'd suggest not taking any barb below 10k unless you are worried someone else might take it to get close to you to attack.

Goto the bottom of the city screen, and there you'll see a box to change the name of it. I believe (I could be wrong) that the first time is free, and subsequent changes require 5 gold coins.

Once you do conquer a barbarian city, any idea how to change its name to something more original than "Barbarian city"?

Cities with no wall also have a basic defense value.

If there are no defending warriors, it means they have a wall, which has a basic defense that can kill attackers even when defending troops are not present. You can attack with rams to destroy a wall to open it up for future attacks

If there's a big barbarian city, I suggest conquering that to start with.
