There are many differences between infantry and mounted units.
For a basic summary, infantry move much more slowly and carry much less resources than mounted units, but they cost less and take only 1 farm capacity each. Certain infantry units, such as lancers, are specifically strong vs. mounted units.
For a more detailed summary of units in the game, go to Help>Units>Units Overview to bring up a spreadsheet of all the Valor units and their stats. Just as a clarification of some of the icons referring to your question, crossed swords mean attacking power, red shield is defense against infantry, and blue shield is defense against mounted units.
