Well, you have to know how and what to build at the right time to avoid this problem. Although I am for more in game features.

If you have too much of a particular resource, there is a good chance you are not setting your cities up properly. It may also mean you aren't attacking enough guards eat through all the iron you can produce. Zerks and lancers eat up the lumber. scholarships take care of the brick.

You will always need iron on advance level, research levels.
I have maxed resources and always purchasing iron from the market place.
Guards & knight eat all iron offered in the market.

It does seem as though that a majority unload iron. I needed the iron when building the Guards and Knights, so I welcomed all those that were trading iron away.

I have my quarry and lumb at lvl 24 while my mine is at 21.

Every time I look at the market everyone is trading iron for something else, and I always seem to have an over abundance of iron myself even with the mine being 5 levels under my lumber mill I still always have more iron then I do wood. Looking at building costs there are little to no buildings that require iron more then they do clay or wood and even with soldiers it is only the prime resource for a few of them and even when it is it's not far ahead of the other two costs. I think this should be more balanced so that the market sees a better flux of resources based on who is building what more than everyone just trading iron at 2:1 and hoping someone will bite on that deal.
