If you demolish a building do you get back the resources that the building took to build?

No, you do not get the resources back, so make your choices wisely. However, if you research the forge to max, research the different things in it, then demolish the forge, you will not lose the research that you have done.

You do however get back the farm space as most lower level buildings require less food.
