Defencive army set up

So I know lancers sentries and guards are the best for defending. But is there the best set up of how much of each to train or it all depends with wat you get attacked with?

It absolutely depends on attacking force. But you can get a good feel by pushing the question mark when you are in barracks, stable or workshop. It explains which defense is best against which offensive. For example lancers are better than sentry against mounted units (knights and guards). Sentry best against infantry. I say best meaning strongest per person unit.
An example why a lancer is better than a guardian against mounted attackers: a lancer has defensive strength of 25 and 50 vs infantry and mounted, respectively. A guardian has 140 and 110. Four lancers equal one guard so now it is 100 and 200 vs 140 and 110. Only drawback of using lancers and sentry is you need more resources to get the value. However I feel that people management will be more important than resource management overall.
