What are the best units to counter a large/medium amount of spies? Is it Spies or Sentries?

Yes. Only defending scouts can kill off attacking scouts.

can attacking scouts kill off defending scouts? if not, how does one?

Killing defending scouts is the same as killing any other unit. Just attack with other troops to take them off.

Okay, but what's the rules for killing/defending against scouts?? For instance if they send 50 scouts, how many do I need to have to fully kill them and prevent them from getting a scouting report? 2x? 3x?

Try to use simulator. Menu in rally point. It's the best way to figure out how troops behave. And levels matter in 3lvl research worlds

Cool, Thanks. Looks like 2.2 is the magic number. 100 scouts sent, 220 needed to defend and kill 100%
