To take a city do I send my scholar with my knights hexhas no troops but a lvl 9 wall

That's right. You must do that until he's loyalty has been lowered to 0.

Make sure you send one scholar per wave so if you send five scholars you need to send five attack waves with troops.

It usually takes 4-5 scholar waves to take an city. that in one round. Remember depending on the world loyalty can go up 3 per hour.

So it scholars are a must totake a city? But if we just want to farm cities do we still need scholars?

Can lancers take cities?

If you would like to have the city for yourself and produce troops and stuff like that then you need to send scholars. But if you want to just farm a city, then do no send scholars, it would be a waist of time. And yes, you can pretty much use anything to farm.

Knights are the best to farm with. They are fast and carry more resouces.

I'm curious, can you only conquer player cities or can you conquer a barb city as well?

Yes you can conquer barbs. If you are just starting out they are the best way to build up before going after another player.

Barbarian cities are good City takers because they grow with you. If you take an inactive city, that just leaves you with more to do on that city.
